We all know that British shellfish is superb, yet 80% of our catch is currently exported. Why should this be? How do we change consumers’ perception of this valuable and sustainable resource?

Guild member Mike Warner (above), Project and Business Development Manager for the Shellfish Association of Great Britain will be discussing the SAGB’s current shellfish promotion project, and as Patron of the National Lobster Hatchery in Padstow he will be focusing on their marine conservation, research and education work in particular.

Mike will be bringing along a couple of live lobsters which will be ably despatched and prepared by Guild member Cyrus Todiwala OBE (below), who also works closely with SAGB and the Hatchery and has expertise in preparing all British shellfish, including the lesser-known likes of spider crabs. Cyrus will prepare lobster and other seasonal native shellfish available on the day in his new demo kitchen and give plenty of hints and tips on shellfish cookery.

Following the talks, video and demonstration, guests will be treated to an Indian-style shellfish lunch, accompanied by a glass of wine.
Please note that Cyrus and Mike are keeping costs at as approachable a level as possible and that these Masterclasses normally cost £150. Many members will not wish to have more than a single glass of wine, but if you do you are welcome to purchase from the list and pay the restaurant directly for any additional drinks.
