For their umpteenth collaboration, Saurav and Humayun have devised a deliciously sumptuous menu that takes the best of an English Christmas and combines it with quality British ingredients and Indian interpretations and flavours. Dishes include Bater Nargisi Kofta (smoking quail mince wrap with quail eggs in a nest, broccoli-parsley soil, carrot pickle and ‘nargisi’ sauce) as well as Peroo Biryani (Norfolk black turkey breast cooked with a layer of Himalayan Basmati rice, sage and wild mushroom raita, and prune and chestnut chutney).
