As guests to past Guild Awards Parties will attest, the growing fascination with wood-fired oven cooking is thoroughly justified, with professional as well as delectable results achievable even from readily available portable models.

Holly and David Jones of Manna from Devon Cooking School (one of The National Cookery School Guide’s top 50 cookery schools) are coming to London to cook some fabulous Devon produce on their Morsø wood-fired ovens. Supported by Food & Drink Devon, they will give Guild of Food Writers members an informative, comprehensive guide to the versatility of this cooking method.

Holly and David regularly cook on a variety of wood-fired ovens throughout the UK and Europe. They are the recognised experts in wood-fired cooking tuition with student numbers (both amateur and professional) increasing twenty fold since they started their wood-fired classes eight years ago.

They have already written two best selling wood-fired oven cook books (the Wood-Fired Oven Cook Book, now in its fifth reprint, and Wood Fired Flatbreads & Pancakes), with more in production and a vibrant social media platform providing regular updates and information. You’ll be able to buy copies of their book during the evening and get all your wood-fired questions answered.

During the evening David and Holly will be cooking on their Danish Morsø Forno ovens and showing the versatility of what can be cooked; remember these are not pizza ovens – they are wood-fired ovens and as such you can pretty much cook anything in them! During the evening’s demonstration, there will be generous tastings of–
Focaccia with Mairena Olive Oil

Roast Brixham Fish with Messina Sauce

Totnes Oats with Red Onions, Beetroot Tops, Pumpkin Seeds and Feta

Souvlaki of Dittisham Lamb with Tzatziki

Empanada with Raspberries and Hazelnuts

The event will take place at the delightful Swan Pub in Chiswick, which has a beautiful courtyard with perfect ambience for the occasion. With an eye on the vagaries of British weather we will however have a sheltered vantage point and indoor seating reserved in case the heavens decide to open.

The Swan will provide a refreshing Aperol Spritz to enjoy while watching the demo, and following the demonstration and tastings, they will serve a light dessert and cheese board along with wine from their exemplary list.

This is a unique opportunity to learn from acknowledged masters in the art of wood-fired oven cooking; if you’re considering buying a wood-fired oven, or simply curious as to what can be produced by this method of cooking, Manna from Devon will amply illustrate its potential.
